Health Nut Blueberry Muffins

¾ cup all-purpose flour
¾ cup whole wheat flour
¾ cup white sugar
¼ cup oat bran
¼ cup quick cooking oats
¼ cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup blueberries
½ cup chopped walnuts
1 banana, mashed
1 cup buttermilk
1 egg
1 tablespoon vegetable oil
1 teaspoon vanilla extract




  1. Shell out your walnuts in a nutcracker machine if necessary. Then, chop the walnuts.
  2. Foreheat the oven to 350 degrees F.
  3. Smear the 12 cup cupcake tray with oil or place paper muffin cups on the tray.
  4. Mix the whole wheat flour, all-purpose flour, oat bran, sugar, wheat germ, quick-cooking oats, salt, baking soda and baking powder in a large bowl.
  5. Lightly mix the walnuts and blueberries. Blend the buttermilk, vanilla, mashed banana, egg and oil in a separate bowl.
  6. Incorporate the wet and dry mixtures and stir them together until fully blended.
  7. Scoop the mixture into muffin cups.
  8. Bake for about 15 to 18 minutes.
